What is the purpose of the "wings" near shoulder level on racing seats? ( http://store1.yimg.com/I/shopmomo_1799_23388054 ). I'm looking to get different seats for my car because mine seem to push my shoulders forward and are not comfortable over long distances.

Keep your body in the seat.

Newer seats $$$ have additional head and shoulder protection to keep your head on your shoulders.

True racing shells in a street car are not desireable, they are hard to get in and out of and have limited adjustment.

yupp. you want your whole upper body supported left/right by the seat.
otherwise, the belts will hold you in position when cornering, which makes for nice bruises after a day on the track ...
