I recently noticed (car is new to me) that when I do drive it with to top off in 45deg weather that the gauges collect condensation inside. Is there a way to correct it from doing that?
My motorcycle does this too but only while the weather is colder and raining.

Try dropping the desiccant packets that come in pill bottles in the back. You may need to pry off the bezels on the fully sealed ones which is a PITA to take it apart and get to the back.
I did this on two 911s and it worked pretty.
