I saw lots of posts saying it would remove the anodizing but none saying not to leave it on to soak.

I was going to paint them as they had a good bit of damage, so that doesn’t change much but it’s a ton more work now.

The cheap stuff at the $1.25 store works good for removing that caked on brake dust, from my experience.
I didn't leave it on for long.
Everywhere that I've heard using oven cleaner discussed has mentioned not to leave it on aluminum for very long. It's a relatively well-known thing that it eats Al. Sorry you were hit by it.
