So I have a lot of things sorted in my (new to me) 1971 but I found that at about 55mph I have a dip in power and when I let off the throttle I get a back fire. I saw somewhere on the post that this is generally means it is running rich or could be an exhaust leak. The car is fuel injected so how do you adjust the fuel/air? I've never been a mechanic but the am learning with all your help.

Look for air leaks. all the little vacuum tubes need to be tight and not leaking. Make sure you are running correct fuel pressure. And make sure your exhaust is not leaking.
