I don't think the temp of the oil in the tank would be very useful data.
Since you already have what appears to be a temp gauge installed I will assume it's working but you are looking to get an idea oh what temp in relation to position on gauge. A easier solution is to buy an IR thermometer and go for a drive, when the gauge shows half way, pull over use the laser pointer on the sump and record a temp. do that for the known needle sweep of your gauge and you now know what temp your car is running.
