Does anyone know of or have a picture of the Original Harness or Harnesses for the rear defrost windows? Did the 914 use 1 or all three? In the parts diagram is appears there is one harness from the switch and another from the relay board..

Different number for different years. 914-6 had the rear window harness built in, the stock 914 did not on early cars. PET will tell you what harness go with what years.

Not sure about the /6 but there are two that I have encountered.
73-74 & 75-76. The Early runs from switch under dash thru the tunnel & firewall sleeve to connect with the relay board in the Eng. compartment.
The late is is a shorter version that connects to the relay junction under the Pass seat.

So does that mean all 914-6's came with the rear defrost harness built in despite not coming with a rear defrost window? Thanks.

All the 70-71 harness I have seen have them built in. I can not say about the 72 model. As I understand it the 72 was mostly 914-4 with -6 adapter harnesses BUT I have never seen one in person.

Can you recall where the lead comes out of the harness at the dash end?

right between the lighter and the defroster/ventilation/heater controls. On my car I can feel the hole behind the basket weave material for the switch.
