Now that my motor is broke in, I would like to spend some dyno time tweaking the engine. Does anyone know of a good shop to take my car to, that actually works on our engines and can tune? Im in south Orange County.

Both of these dyno shops use the Dynojet 248c,
I prefer this brand over Mustang brand dyno. Once your tech hands you the corrected data printout, it's a real good indication of engine output /less your driveline loss.
Shop 1) E.A.S. in Anaheim 714.369.8524
Shop 2) Gameface Motorsports (Whittier) 562.695.5049
Shop 1> mostly BMW
Shop 2> mostly Porsche

I use Church automotive testing in wilimington.
Its a dynopack. very acurate and very safe to use.
