From memory (and searches) the top is covered with foam and vinyl, then the top dash pad. Then on the face is basket weave with lower pad underneath.

My question is, is there any of the dash which is just paint on show?

It wasn't factory but I saw one recently and it looked good. It was common on early 911/912's. It was done on the white lightweight 914 with flared fenders. He left out most of the dash, made a shorty - dash pod and then painted the sub dash white. Great looking car with all kinds of neat details.

The instrument cluster is painted, and you can usually see a bit of paint on the edges of the dash around the steering column and glove box door / hinge.
