So, if I go with the Koni sport rear shocks, do I not require the coilover conversion kits to lower the car slightly (<I inch). Can I stick with stock, uncut springs?

You can use the stock springs with the Koni rear shocks.

The rear shock have grooves cut into the shock body for the circlip that hold the lower spring perch. I think you get 3 height setting to choose from, not a lot of range.
