I am looking at the Bursch exhaust for my 2056 and need some guidance.

The Bursch BX.1404.SS combines cyls 2&4 and 1&3 crossing over from one side of the engine to the other.

The Bursch BX.1402.SS combines cyls 1&2 and 3&4 crossing over the pipes on just the same side.

What is the difference in performance?

I don't think you will feel a difference. Free flow in better.

The firing order is 1-4-3-2 so both of those exhausts should work about the same.

Decent explanation of headers:

Believe the T1 shares the same firing order as a T4.

The part numbers posted look to me like two parts in the same system and both are needed unless you're using your existing heat exchangers.

As far as which cylinders to merge you want 1-3 and 2-4 grouped so that pulses are 180° out from each other. Doesn't matter in a 4:1 system but in a 4:2:1 or 4:2 it will.
