The trim and top piece of the roll bar on my 72 914 are in need of some work, and I want to remove them to work on them in the basement. What are the tricks to getting these pieces off?

Remove the very small phillips screw on each of the side pieces at the top and either slide them off of the bottom bracket or remove the nuts from below,inner wheel well, careful a very common problem is the stud or nut will snap off. Then just pull the top piece that runs across the back off, it is snapped in place with three clips.

The nuts holding the retaining clips (on the side pieces) are M5. Sometimes they'll be covered with undercoating that you'll need to chip away.
