I performed this mod a couple years ago. I had the console out of my car this weekend so I thought I would take some pics to show what I did. It's very easy to copy if you like it.

The front of the console has a piece of plywood that keeps the two side panels separated. By removing this piece, the driver's side of the console can be mvoed over, creating more room for your foot around the throttle.

What you see in the pics is an aluminum bracket I made to hold the panels together. Just bend it up in a vice as shown. The passenger side reuses the original screw holes that held the plywood part in place, and the other side just screws into the inner side of the console with short screws.
