I am restoring a 914 and have had it jacked up a few times. Now it is much lower on one side. The suggestion is that the springs may have come off their perches. I have looked up underneath, and the springs seem to be in the retainers. Is there a way to tell for sure without taking the struts off?

They maybe in the retainers, but they also have to be indexed to the relief in the retainer, did you rotate them? Make sure you roll the car back and forth a few feet each time you raise it up to allow the suspension to line itself back up. You will always have positive camber when you let it down.
