Just got a 75 2.0 that has had dual Webbers replace the fule injection...
Do carb conversions require a different cam?
do just bolting on carbs do the trick?

Carbs require a different cam to run *at their best*. But the car will run on the stock cam using dual carbs. You will just be leaving power on the table.

.As you just got the car, ....sort it out first. optimize the carburator settings and jetting...for that camshaft/piston cylinder, head combination...optimize the ignition timing...the "OEM" stock camshaft works with fuel injection, and will work just fine with carburators with a little tuning.Carburator CAMS will have more duration,(and generally) more lift, which is why they work better,produce more H.P., and at higher rpms........optimize what you have first.
