Getting my 3.2 engine parts ready for powder coat and the only part that it thing will stick out after powder coating is the Mass Air Flow Meter. I would like it powder coated but I would not think it would hold up to the heat considering it has a plastic cover. Anyone ever tried this, or is it simply too risky?

Not a good idea. You can't powder coat plastic and the actual element of the MAF is very sensitive even to the wrong type of solvent.

No you can't. Powdercoat process gets up to 400+ degrees. Plastic will melt, solder will flow, etc. Not good.
But some time with sandpaper, masking tape and paint and you can get that thing looking nice.
