got rid of my FI system, converting to carbs. I let the main FI harness go with the FI system but now I am wondering if I should have kept it.

Do I need it for wiring the starter, ignition, etc?

If you are still running an alternator then retaining the relay board is a good idea. In that case it is easy to use the 12 pin connector to attach all the engine related wiring to the main harness. The big yellow wire goes to the starter, black and purple is tachometer (coil -) I think, etc.

nope, no alternator.

so how does that change things?

I only need to get power to the starter, ignition, and tach I guess.

and where does the main battery lead go to? the starter?

Yup.
The relay board is convenient for the voltage regulator, which you no longer need - ditch it.
You can pull the main wiring harness too and only run the wires you really need.
Do you have a kill switch?

We have a main switch and I remember my mechanic went through alot of trouble making sure it killed the alt so the motor would stop when the switch was thrown.

For now I don't mind leaving the relay board, just want to get her running.

so what goes where? I am an idiot when it comes to wires and diagrams.
