how hard and what would you need to do a conversion using the 2.7. Has anyone here done this and documented/taken pics of it

Do a search and read over the MANY previous discussions. Doing the 2.7 is no different from any other Six (except for the 2.0, which is very easy since even the flywheels match and it already has carbs). There's a thread running right now about doing a Six conversion on the cheap. There's also a tech article on Pelican about doing this conversion.
