Just ran new accelerator, clutch, and speedo cables.
With the accel and clutch cables, is there any chance of them getting twisted or hung up in the tunnel? Not sure how far in the steel tubes go.

yes. in the front. the tubes end somewhere half way between the shifter and the front firewall.
get a nirror and a light and look inside the tunnel from the front access hole.
you'll be able to see if they're twisted while moving one ...

If the clutch and accel cables are crossed/twisted they rub against each
other and can start catching. Once they start grabing each other,
depressing the clutch will "depress" the accelerator, which
can be a very bad thing.
High revs just before a shift, unloading the engine, then flooring
the gas pedal.
This actually happened to me about 15 years ago
and was quite frightening since I wasn't quite sure what was going on.
I too had replaced all the cables but the cables didn't starting catching
for a few weeks. So as it was happening, I didn't relate the problem
to crossed cables.
In my case, I believe that the Rev limiter saved the engine.
I ended up immediately turning off the ignition to kill the engine.
That in itself is kind of scary since if you turn off the key too far
the steering wheel locks - which is what I did - while the car was still
moving. (won't ever do that again)
Since it was also late at night, the headlights went off.
So there I was driving along, pumped with adrenaline from
the screaming engine and then I locked my steering wheel
and turned of my lights. I immediately stopped in the road.
As luck would have it, a policeman was nearby and from his
point of view, I turned off my headlights and stopped
in the middle of the road. He then pulled me over.
I had to explain what happened to him 3 times.
Finally, he understood and actually escorted me home.
He was actually a real nice guy.
BTW, it was a bit hard to re-start (took a few times)
since every time I pushed the clutch it floored the gas pedal.
I had to pull up the gas pedal with my right foot as the clutch was
depress just to get the car restarted.
Long story, but do check to make sure you haven't crossed
your cables.
