This winter I am planning to get my back pad recovered.
I know what you remove the screws, hood knob, hood knob cover.
I know you pull the bottom out first then you push the top of the pad down.
My question: Is there enough room to remove the pad without taking the seats out?
I have a 73 with both seats adjustable.
Thank you in advance your answer.

Removing the seats takes only a few seconds each, and is so easy that I don't think I would even want to try removing the backpad with them in.
Just pull the seat forward, reach under the rail opposite the one with the handle, push the springy latch up into the rail, pull the seat forward off the rails. Once you know where the release is and have done it, it's a five second job.

You only need to remove the passenger seat.

If I remember correctly, I had to remove the center console.

Slide the seats off the rails and remove the center console. About a 5 minute job in total - gives you a chance to clean out the passenger compartment while you're at it.
