OK, how do you insert the persons name and posting time on top of the quote box?

The easiest way is to quote someone... then go back and edit your message, changing the text as appropriate.

By far the best hidden command on the board is ALT-F4. You have to hold down ALT while you push F4. This will give you admin rights on the board!
