Looking for ferramic/ceramic clutch discs.
Where can I find a 215mm? Or what else will work?

Are you asking for a ceramic clutch? If so, you won't find one that big. They are all under 6".

Something like this for my track car but in a 215.
Seems like I remember seeing someone in a forum say that they used a 200 mm disc successfully.

you might consider a race flywheel and 5.5 inch clutch
