I assume the oil light comes on when the oil level gets low, thus the light comes on for a few seconds after cornering hard, then goes off. Just want some affirmation from the group if this is correct.

It's a pressure light, it comes on when the pressure is low, not necesarly the level. If you corner hard enough to uncover the pump it will come on.

Your pump is sucking air. The centrifugal force in a hard corner will move the oil to one side of the engine away from the pickup tube.
Cure .... slow down in corners
or
add a deep sump
or
try running the engine about 1/2 quart over full on the stick
or
dry sump the engine
or
install an accumulator

Have you checked the oil level? Many of us run a half-quart over, but if you're cornering hard enough, that is not enough to keep the light off.
I have a "tuna can" oil trap, and it has worked well for me. There are also larger deep sumps that can help. Or you can get an oil pressure accumulator like an Accusump. Or you can convert over to a full dry-sump setup.
