The spedometer works on the '73 914 I am acquiring, but the odometer does not; neither does the trip meter. I assume this means something has broken inside the speedo? Any suggestions as to the best place to send it for repair?

Yes its not too difficult. there is a gear that comes loose on its shaft

I've just acquired a 1970 914. Same problem as original poster.. speedo works (if you call bouncing around all over the place working!) but odo and trip meter do not..

I'm about to order some parts from Pelican but need to know if I need to buy the plastic odo gear too?

Usually there's no new gear needed. The typical failure mode is that a pot-metal gear inside the odo mechanism starts to spin on its shaft, rather than turning with the shaft. Simply peen the area around the hole in the gear to distort it, and put the shaft back through the hole. Or use some epoxy, perhaps?

Had the same problem last week. Fixed it myself as per the methods above. It is just a matter of reattaching that gear mentioned to the shaft. Hardest part was making sure all the numbers lined up when reassembling. Took a couple of tries but I got it. Do not give away your money having someone else do this simple job. No need to.

also if youre spedo is bouncy that is the cable binding. you can try to lube it from the top or pull the inner cable out and clean off the rust . I think there may be clip and one end that needs to be removed to get it out.
