Has anyone removed the chrome trim around the windshield and kept it off? How does look? Is the rubber exposed and does it flow or does it look awful? I like the non chrome look and am contemplating this.

you would need to buy the proper rubber trim (914rubber.com) and have it installed. I am thinking about leaving the chrome trim off on my GT build since the chrome is known to come off in the wind at high speeds. Eric Shea had this problem on his xcountry trip.

Now, when you say high speeds.....are we talking 70 MPH, 120MPH? or more?

I'm betting eric drove a bit over 70 at times and while i have complete faith in Scotty's abilities, loosing the trim is a known issue on cars that get tracked. Its just a thought right now, not something that keeps me up at night.
Theoretically, with an H gear and a 6850 redline, I can go 155
