Am told by my shop that my first gear is gone on my newly acquired 75 1.8L. Question...what should I expect to have 1st gear replaced? And, how hard is the job should I try and attempt it myself?

If not, have someone who does do the work.

I do not have any experience with transmissions. I'm being told he can get it done for about $1000-$1100.

Has he checked your clutch cable tension, clutch tube, and clutch release fork?

Just installed a brand new clutch. I bought the car not running knowing the clutch was bad. After the clutch was installed, upon test driving found 1st gear was gone.

Check out that link that Rich gave you. It's not that difficult and can be done with a minimum set of hand tools. If you get tripped up take pics and post 'em here. It's what were famous for. There are a few members in the DFW area that would be willing to help as well. Well, I'm pretty sure they would offer.

For $50 you can order Dr Evil's complete step by step video detailing the disassembly and assembly of the 901 transmission.

Start looking for a good used 1st gear slider for $75 to $100. $1000-$1100, is high, but a new slider goes for $500 plus $60 for a gallon of Swepco gear oil.
