Looks like a plastic cover to me. Look around the ashtray and above the gauges.

Your right it is a dash cap, it's a redash dash cap, no longer available. The cap is held on by the A pillars no glue is needed.

The seats are made in italy, Eric Shea would have the name and model of the seats.

I saw this car at the Red Rocks Classic and it looks even better in person. Nice job!

Very nice! Are your belts secure without cutouts in the bolsters? That's what I had to do with my Scheels.

Good point, never thought to do hidden cutouts like you did. I'm rather slim so having a tighter belt would help on my Koenig (Scheel clones).

Any tips/tricks on how you did yours?
