Actually, we are in luck there. There are several options to put good tires on them for a GT in the correct 195/65 or 185/70 front and 215/60 rear, all of which perform well and look period correct:
Avon CR6ZZ
Pirelli P6000 N2 (Porsche approved)
Pirelli CN36
I'd do the P6000s on the street (I am running the Avons and don't love them), which is what you see on the yellow car above. Are they as good as modern autocross or track tire? No. But those can be had, too. 225/50R15 allows one to go square on seriously sticky rubber, and then there are dedicated race tires.
And if you want vintage looks with SERIOUS performance, you can always go the Michelin TB15 route...
