What's best to use on the back of the 2 curved pieces that go vertical on the rear of the roll bar? Also the 2 small pieces that sit on top of the roll bar.

I'm assuming some kind of foam tape or non hardening sealant, but what?

It uses clips. You can find them at most 914 parts houses.

I have the clips for the long piece and i have bolt/plates that screw through the fender but when i removed them the trim mentioned had some black gunk in strategic places to stop impact damagae on the paint.

The black gunk is something a previous owner used to secure it. If you want to go that route, 3M black weatherstrip adhesive or silicone should work.
