We have a Getty dash with a 911 oil pressure and temp gauge. Can we use this somehow with with our 350 SBC motor? What sensors would we need?

You need the sensors meant for the gauge, so Porsche.
Everything is likely 1/8 NPT so fitting them will be a snap.
