Reading and watching videos on how to setup the 123ignition. I started it after a full rebuild with static timing. Naturally I didn't look at the fan closely to notice the timing mark was MIA. But I got it close enough and it sounds pretty good with static timing (only ran a minute or two).

Now comes the setting of the 123 and the break-in. My engine is a little different from those I've read about/watched on YouTube. I have a 1700 with a big bore kit, Engle cam (medium), Weber 40s with 28 chokes. From what I've read, this should be my curve?

1 500rpm 12 degrees
2 1000rpm 14 degrees
3 2000rpm 22 degrees
4 3000rpm 27 degrees
5 3500rpm 28 degrees

Does that sound right?

I have a 2.0 with 40s and 30 ventures, I'm using pretty much that same curve. It should work for you fine. Just check for dead spots in your acceleration and adjust if necessary.
