she has no idea what the settings are for her email or even who hosts her domain

I know that if I restore her outlook data file, the settings for her email do not carry over. Is there somewhere in the resgistry or maybe a text file that stores the settings for username, password, etc for the email accounts?

the per user settings are stored in the registry in HKEY_USERS between sessions. If they are anywhere, they are there. But you will have to figure out which entry under HKEY_USERS is hers. There is no account names, just security identifiers.

You might contact her ISP to get the settings too.
