I got the rear sway seperated from the shock bolts using a big wrench and 'popping' them off like a pickle fork would do. What is the correct way to reattach them?

same ... big pipe-wrench werks just fine ...

Just beat them back on? I don't have to do anything like remove the bushing. put it on the shock bolt, then slide the rod over top?

don't beat 'em, bushings in the droplink where they belong, put on the round bolt-end, use very large pipe-wrench to press droplink onto the bolt-end ...

I can't quite picture using a pipe wrench... I have a decent sized one that I used for the struts, I'll put it up there and see if anything makes sense.

In a pinch could I use a C-Clamp to squeeze them back together?
