how do i go about removing this to replace the piece?

You have to pull the CV off the axle shaft unfortunately.

ugh so i got under there... and i dont know how to remove the spiral pins.

what tools are neccessary? im only replacing the boot and metal cover thing.

what grease is recommended for these btw?

Spiral pins? Are you talking about the circlips? You need some circlip pliers to get those off, you may be able to pull it off with something else, but circlip pliers make it easier.

I would think that standard cv joint grease would be fine but I'm not sure.

haha well that question about the grease was more or less to prove a point to my dad. ("whaaa well im shure dat you can use any kind o' grease")
