After reading most of the treads of set-up I'm not sure which it is, +5 or -5.
For a track car should I move the tower towards the windshield or towards the front of the car

The 5° caster angle specification will have the top of the strut tilting toward the windshield.

i had the shop set mine to +5.5 ...

which way is that towards the windshield or towards the front of the car?

you wont want it towards the front, but to each there own.
the more caster towards the rear the more stable the steering will feel at speed and will give more on center feel to the wheel. it also helps by adding more camber while turning .

Stable at speed sounds like a good thing. (+ added camber in turn)
