couldn't find the wire to measure the temp tho

When you pull the taco plate, the oil comes with it too, right?

yepp, it's basically a very big drain-plug ...

Not if the cook drains them on paper towels before serving them...

yupp, you found it!
notice:
if you want to remove the cover plate to get to the sending unit,
you have to unbolt the whole thing!
meaning, you needa drain the oil first, otherwise you will get a VERY quick oil-drain
