My new 19mm MC has only one wire connection for the break light...which of the two wires from my wiring harness do I connect?

Both wires. You need to take the switch off your old master cylinder. Cars up to 74 have a ballast connected on the hand brake behind the dash. If you need a new one I have 2 left. I believe they are no longer available. $30 shippped Priority Mail.
