While switching to carbs I need to block off my return line in my gas tank. I purchased a kit that came with a solid spacer and a short section of hose and some clamps however this seems more like a temporary solution.

Has anyone simply filled up the return line nipple with epoxy or something compatible with gas?

I cant remember the actual size and thread, but you could buy a "cap type fitting" and plug it at the tank.
