Looking at a 73 1.7 with one carb. Is this a deal breaker?

Not a deal breaker if the rest of the car checks out. The single carb can easily be replaced.

There are 3 major issues you need to look out for:
- Rust
- Corrosion
- Fe2O3•32H2O
