I'm looking for a trailer hitch that I can put on my 1973 914 for the purposes of pulling a very small trailer for track days.

I don’t know many folks who would like holes drilled into their rear bumper

Awesome that you had those build sheet drawings!
For me, I have no bumper and I'm way way way away from stock. So I think I'll be making a receiver and mounting it in the trunk to come through where the bumper used to be. The HF trailer only weighs 150 Lbs, so a simple receiver mounted on a plate in the trunk should do the job.
That said, just having those plan drawings posted for searches will serve the community well my friend! Kudos to you ;-)
