The shop I went to for a wheel alignment could not get it done on my 914, since the wheel-mounted assemblies ran into the front fenders. For those who have done this, what systems work on a 914 (stock Fuchs wheels that look recessed in the front, and slightly lowered)?

I've been to at least two different shops that used wheel-mounted sensors to align my 914. Zero problems. I've also used the "strings" method at home. More of a problem because I had trouble making the measurements repeatable, almost certainly due to user error.
I think you need to talk to other shops to see if they would have problems with wheels that actually fit inside the fenders, or you need to look up how to do your own alignments.

Smart strings, longacre camber caster gauge. Repeatable, reliable, reusable.
They are only as accurate as your attention to detail.
I believe someone on here or on the bird site made their own version of smartstrings using electrical conduit. I’ll link,if I can find.

I know a shop near me uses the hunter alignment machine. But I run 5 bolts and not sure which Fuchs your using.
I would think either should be fine
