It looks like Vredestein has introduce a new v rated performance tire in 195/60-15 size. It kind of looks like the old Pirelli P600. This might be a good choice, although not many reviews or ratings yet:

The concerns about keeping the tires in cold conditions is a concern with these tires.

Note: Tires exposed to temperatures of 20 degrees F (-7 degrees C) or lower must be permitted to gradually return to temperatures of at least 40 degrees F (5 degrees C) for at least 24 hours before they are flexed in any manner, such as by adjusting inflation pressures, mounting them on wheels, or using them to support, roll or drive a vehicle.

Looks like with these tires you pretty much have to the keep the car on jack stands over the winter.

I put a set on my Bumblebee project last month, Wanted to go with the 165s but they were backordered a few months so went with the 175s.
Cool vintage look, proper sidewall height, and while I havent gone to crazy yet (still sorting the car out) the little i have pushed them they feel pretty sticky. It does feel like an autocross compound on a narrow, high sidewall, vintage tread tire.

Thankfully my garage is heated.
